This is the easiest one I make at work. Boil tortellini flavor of choice, drain, and toss with pesto. Toss in some grape tomatoes, sliced black olives, a little salt and pepper, and top with shredded Parmesan.

Most on the menus are very upscale and would take time to make on the spot. You could go with an omelet and put avocados in it. Add any avocado to a dish around here and it suddenly makes it "Californian".
