Is "from scratch" to informal for a serious essay?

"The process of making filo (from scratch) is known to be extremely time consuming."

I need another way to say "from scratch", or is it okay?

You could say "The process of making your own filo pastry is known to be extremely time consuming."

From scratch is a bit colloquial and strictly speaking means from nothing; without resources which is slightly inaccurate, here.
