You've already noted that not all colleges accept AP credit. Some colleges also only accept certain AP credits (for instance, accepting Physics C but not Physics . Some give you "transfer credit" but still make you take the introductory courses (in effect just giving you free elective credit); others don't give credit at all but allow you to skip / test out of introductory courses.
There's too many colleges and too many individual policies to list out which colleges do or don't (or partially) accept AP credit.
The schools don't make you take it again, they just let you move on to the next level of the class and don't accept the credit for it. The schools I know do that are Smith and Rice, and I'm sure there are a lot more.
