How do I arrange contacts into categories?

I have 5 categories i.e. friends, church, prayer partnets etc. I have a list of names and e-mails but I want to put them into their prespective categories so that I can send e-mails to each group without putting in each persons e-mail by hand each time I send them an e-mail.
