HOMEMADE PIZZA BASE RECIPES?

I love pizza but because of food allergies to some preservatives I am not game to try frozen bases etc. also a homemade pizza sauce would be appreciated. I MISS MY PIZZA.

    Basic Pizza Sauce

    Amount Measure Ingredient -- Preparation Method

    1 Can Whole tomatoes (35 Ounce can)

    1 Teaspoon Basil -- Oregano, or

    Marjoram

    1 Clove Garlic, peeled -- crushed and minced

    2 Tablespoons Tomato paste -- optional

    Black pepper, freshly ground -- to taste

    Salt -- to Taste

    1. Pour the contents of the tomato can into a 2-quart, heavy non-aluminum saucepan and coarsely crush the tomatoes with a fork.

    2. Add the herbs, garlic, tomato paste, salt, and pepper.

    3. Bring to a bubble over medium heat, siring to mix the seasonings.

    4. As soon as the sauce begins to bubble, turn the heat to low and maintain the sauce=

    at a gentle simmer.

    5. Cook, uncovered, siring from time to time, for a minimum of 15 minutes and a maximum of 1 hour.

    Title: GARLIC LOVER'S PIZZA SAUCE

    Yield: 10 servings

    3 tb Olive Oil

    1/2 c Onion; Minced, 1 Md.

    1/2 Green Pepper; Minced

    3 Cloves Garlic; Large, Minced

    1 1/2 c Water

    6 oz Tomato Paste; 1 Can

    1/2 ts Basil; Dried

    1/2 ts Oregano; Dried

    1 ts Parsley; Dried

    Salt & Pepper; To Taste

    Pour the oil into a deep, heavy skilled over medium-high heat. Add

    the onion and green pepper then cook and stir for about 5 minutes.

    Add the garlic and continue to cook, stirring, until the vegetables

    are tender. Add the water and then stir in the tomato paste. Sprinkle

    the sauce with the basil, oregano, and parsley. Lower the heat and

    let simmer for about 5 minuts. Add the salt and pepper to taste. If

    desired, add 2 to 3 dashes of hot pepper sauce. Let simmer, stirring

    often, about 30 minutes or until the sauce if very thick.

    Makes about 3 Cups of sauce. This is sufficient sauce for two 12 to

    14-inch round pizza or 1 oblong pizza or 1 deep dish pizza.

  • For the sauce, use whatever tomato you can, paste or crushed tomato is best. Add to your liking, salt, garlic, sweet basil and oregano. For other spices, use your imagination and flavor likes. I like to add cooked onion, green pepper and lightly cooked celery with diced tomatoes. To thicken if it is to thin, add about a tablespoon of flour as you finish pre-cooking the onion. Then stir into sauce. If you already have the onion in the sauce and it is thin, use a little cold water and add the tablespoon of flour to that, mix with fork or whisk and then stir the sauce as you add the flour/water. (Make sure the sauce is bubbling when you add the flour/water.)
