It's probably so that they can iron out more bugs and make the best game they possibly can. It's Grand Theft Auto so Rockstar don't have to worry about releasing it at the same time as the new Call of Duty or Battlefield, since people will buy GTA V whichever time of year it's released at.

I think so they can fix all the bugs and yes to get more sales the later its released.
