How do hens express happiness / sadness?

We have recently acquired an injured chicken who we are coaxing back to health. In our efforts to be good owners, we'd like to recognise when the hen is happy and when it's unhappy.
How do hens typically express happiness / unhappiness?
What kind of things (other than food) would make her happy? She doesn't seem to like shows of affection but seems to be content being around us.

I would say that a happy chicken will be walking around, searching for food, etc. When it sits down, it should not look listless or stay there for a long time. Here is a link to a healthy bird checklist:

i have 5 hens and havent really learned that either but mine love grass since they arent free range hens. when i think mine are happy they fallow me and well they growl at me or what ever they do (not clucking) and specailly Ducky and Whitie they love to be between my feet or right next to me. and mine absolutly love hen treats. they are dehydrated worms and they love them also my ducks love them its the only thing they will come to me for.
