In order to become a crew member you apply via the airlines website. Some of them just require a CV but most of the carter companies get you to fill out long application forms. The main requirements are
You have to be 5'2
Swim unaided for 25m
Pass all your exams ie, Leaving Cert, GCSE
Customer service role for 2 or more years
(one or two airlines require a drivers licence- ie Flybe)
They are the main ones. You do not have to have another language but it is an advantage. If you pass the selection and interview sage you go on to a training course which could be 4-5 weeks. Exams every day and a 95% pass rate. You can only fail one exam. You do a repet, if fail again you are out of the course and back to stage one.
THe main duties of crew are taking care of the saftey of all passengers and crew members. That is your main job. You are there for primeraly for saftey. The service is provided as an niceity.
I think you mean steward/stewardess. That is what I am planning on being, you have to have 2 years of customer service experience. Sometimes be multi lingual and then be over 18 sometimes. So it is an extensive process.

Matt - air host/hostess is commonly used overseas
And Steward/Stewardess is not used anymore, especially in the U.S.
