How do I over-winter a sweet potato?
We bought one last winter and never used it. It's been sprouting on the counter all summer, but I haven't planted it. I live in Maryland, so I can't put it outside until late spring. Should I plant it in a pot for the winter or can I keep it on the counter again? I'd really like to try growing it next year.
Note: I paired back some of the longer sprouts. Some were over a foot long!

I'm not 100% sure about sweet potatoes, but I keep regular potatoes in the basement over the winter and plant them out in EARLY spring (January to February). I just make sure the potatoes are dry and have good air circulation around them so no molds will grow.
