First of all, I would recommend sitting down and really reflecting on what your career options are and what major will help you attain them and keep you satisfied. The three things you've listed (Bio, Math and Business) don't share a lot of similarities and require heavy amounts of prerequisites. The effort you will be required to put in to earn three associates would probably outweigh the requirements of a bachelors, which should be your first educational goal.
After the bachelors you can then begin considering options for masters degrees based on you career and educational ambitions. Also keep in mind that with college graduate rates rising everyday because of the recent downturn in the economy, more advanced degrees are becoming increasingly important. I personally don't believe that Associates degrees will get your foot in many doors. Instead channel that ambition into 1 (maybe 2) areas and excel in it.
