If I cast a Thieving Spirit or a Spellstutter Sprite, does the Bitterblossom count as one? Also, if I cast a Mistbind Clique, can I champion the Bitterblossom?

Yep, bitterblossom counts as a faerie. And you can champion it with the clique.
Does it list the Bitterblossom with the subtype of Faerie? Then yes.
