If I was to join the Air Force, and I was ranked up a couple of times, and then I left for like a year. If I then joined the Marines, would my old rank stay?
Every ranch has a "prior service constructive credit" policy concerning the transfer of rank. And they all differ widely and have a lot of factors.
While you may not start out again as E-1..you will most definitely not have the same rank that you had in the other branch.

I will give you an example from Air Force to Army (as I have experience dealing with this)
Lets say you were a E-6 with the AFSC 3V031 which in the Army is MOS 25M (directly transfers over). And you switched over as a 25M. The Army would bring you in as an E-5 but no higher.
But lets say you were a USAF E-6 and held an AFSC with no equivalent in the Army you would be brought in as an E-4 and no higher.
If I remember correctly, not exactly. You will go to Marine Corps boot camp just like everyone else with no rank and once you graduate you will be a PVT or PFC (depending on a couple of factors). The highest I think you could get straight out of boot camp being prior service would be LCPL (and that's dependant on your rank in the other service). Your recruiter might be able to clear it up a little better.
ESPECIALLY for the Marines. even if you were an E5 in the AF you would complete Marne Boot camp as an E2, period.
assuming fo course the Marines would even let you come over to their side. Most branches do NOT currently accept prior service at all, or only if very precise pre requisites are met.
also, generally speaking, you lose a paygrade for every 6 months you are out, even if you go back to your old Branch.
