How does a developer create an "email-in" feature?

I understand what email-in is, but how does work? How would one go about creating such a feature? From what I see...mostly SaaS apps use this feature.

Update:

Slice.com and Wunderlist offer the email-in feature. If I have an account with them, I can send my "orders" or "list" to them by using the email that is registered with the account. For example:

[email protected] to [email protected]

or

[email protected] to [email protected]

Whatever I email will appear in my account.

I think Zoho Docs has this and Basecamp. Basecamp uses an email designated to a specific project, but Slice and Wunderlist do not.

I'm want to know specifically HOW. Common sense, the app recognizes my email and says [email protected] goes to the [email protected] account. Is there like a general inbox that get's filtered? What is the process called? I remember reading about. I just can not remember the tech term.

  • "Email-in" does not really signifies anything, unless you are talking of a registered user on site that has its own mailbox. Pls, explain what you want, or give us a full URl of the model you are looking for.
