How to add cocoa powder to a cake recipe?

Like do you substitute equal amounts of flour with cocoa powder, or can u just add cocoa powder to the recipe without substituting anything? I was thinking of making a chocolate chiffon cake with my original chiffon cake recipe.

  • Just add it on top of all the other ingredients. Don't take out any flour or the cake won't have the structure from the gluten that it needs to hold together.

  • Just add the cocoa powder to the dry ingredients. Do not replace flour just add the cocoa powder.

If you want to make the cake a marble cake make the cake batter and remove about 1 1/2 cups of the batter and add the cocoa powder to the reserved batter drop by spoonful onto white batter and swirl through the cake.

If you want to make a real interesting cake go to http://www.kingarthurflour.com/ and click on recipes then search for the Zebra Cake. It is amazing how it is done and would work for a 2 layer cake. Just follow the directions for the stripes. I can't wait to try it myself.

  • Sieve the cocoa powder with the flour and fold into the cake mixture

  • add a tablespoon of cocoa powder to the mix or stir in some melted chocolate mixed with milk. I would recommend pouring chocolate custard over individual slices if you want to add the chocolate on top.
