How to preserve cupcakes?
My friend made me 24 carrot cupcakes with cream cheese frosting. Right now, they're sitting on a plate covered in saran wrap. Would they be good to just store in the fridge?

Put them in a box with foil or plastic wrap over the top. Place box in a cool portion of your home. Find room in the fridge (or garage if cold enough) if the frosting needs to be refrigerated!
Freeze them- once I screwed up a recipe and had to triple it to preserve the proportions in the recipe, and made over 50 cupcakes. I just popped the majority of them in the freezer, and the day I wanted to serve them I took them out a few hours (4 -5) before and let them defrost in the moderate temperature of my kitchen. They tasted freshly baked for weeks to come! But if you only need ot store them a few days, the fridge is fine. They will eventually go bad there though.
I wouldn't put them in the fridge--I know that bread goes stale in the fridge so cakes prolly would too. An airtight container or just cover with plastic wrap----let toothpicks stick outta the tops for the plastic to rest on. Leave in a cool spot in your home or freeze them--they'll only take about 1 hour to defrost.
Yes, they should keep fine in the fridge for several days, but too long and they might get stale or mushy and the cream cheese might go bad (although I think the cheese would stay fine even after the cake part got stale/mushy). If you need to store them for more than 4 days or so, freeze them instead.
I would freeze them & just take one out when you want it.It would only take 10 minutes to defrost.
