Plug your iPod into your computer, when the device comes up, press the little arrow next to it and a list will come up underneath it. There should be an option for pictures and you can right click and delete from there.
However, if you took the picture using the camera, there is a little trash can in the bottom right hand corner when you are viewing the picture, just press it and the delete option comes up.
If you took the photo (on the new iPod Touch) go to the camera, click the square in the left bottom corner, this will take you to your photos, then select the one you want to delete and click the trash can.
If you put the photo on the iPod via iTunes, you need to remove it via iTunes (when on iTunes, select your iPod on the side and before clicking sync, select photos from the options on the top and remove the ones you want removed).

You have to go on your computer while you have your ipod plugged in to delete them. unless there on saved photos then you can just click the trashcan
